New from Lincoln · on the culinary center floor now

A bigger oven for high-volume pizza.

The new Aperion XL One 3255 pairs a 32-inch wide conveyor with a 55-inch cook chamber, and its impingement technology cuts bake times so pies keep moving during the rush. Stack it up to three ovens high, in natural gas or propane — and cleaning day just got easier, because everything comes out the front.

Cleanup moves to the front.

The door removes from the front, so the conveyor slides straight out where your crew is standing. Jet plates pull out the same way, and universal finger assemblies keep setup and maintenance simple. Less time on cleaning means more time on service.

Built for the rush.

Impingement technology drives heat into the pie from above and below at once, cutting bake times so the conveyor keeps pace with the line out the door.

It grows vertically.

Volume climbing? Stack up to three ovens high on the same footprint — no extra square footage, in natural gas or propane.
