How many glasses does a bar need per seat?

The working convention is two to three of each actively used glass style per seat — covering the glass in use, the one in the wash, and the one on the shelf. An 80-seat full-cocktail program stocks roughly 200 rocks glasses and similar counts across its other core styles.

Which glass styles does a bar actually need?

Fewer than the catalog suggests. A casual program runs on rocks, pint, all-purpose wine, and a tall glass. A cocktail program adds a coupe. A wine-led room splits red and white and adds flutes. Every additional style multiplies inventory, storage, and washing complexity.

Why is glassware breakage budgeted higher than china?

Stemware and thin-walled glass fail at several times the rate of plates — bar wells, sanitizer temperature swings, and speed racks are hard on glass. Programs typically hold a deeper reserve and standardize on styles their dealer stocks for fast replacement.
