What size commercial dishwasher do I need?

Champion's published bands: undercounter machines to about 50 seats, door-type for 51 to 75, rack conveyors for 75 to 125, and flight-type machines from about 750 seats. Then check the rack math — seats × pieces per cover ÷ rack capacity — against the machine's NSF racks-per-hour rating at 70%.

Why only 70% of the NSF rating?

Because the NSF number is a laboratory ceiling — continuous racks, no gaps. Real dish rooms scrape, load unevenly, and stall between bus tubs. Champion's own guidance: plan on 70% of rated throughput.

High-temp or chemical sanitizing?

High-temp machines sanitize with a 180°F final rinse and dry faster; low-temp machines sanitize chemically and cost less up front but add chemical cost forever. Utility availability and ware type usually decide — a conversation for the spec, not the spreadsheet.
