What horsepower disposer does a restaurant need?

Per InSinkErator's published sizing chart: light-duty operations run ½ to ¾ HP, full-service restaurants typically ¾ to 2 HP, and buffets, cafeterias, and institutions 3 to 10 HP — with waste composition pushing you up a tier when scrap runs heavy on meat and bone.

Can a disposer be too big?

The manufacturer's own rule is the opposite worry: never downsize. An oversized disposer simply lasts; an undersized one jams, overheats, and dies young.
