Where the rules come from

How many serving lines does a school cafeteria need?
The federal facility-planning rule is one serving counter per 200 to 250 diners per lunch period. An 850-student building at 57% participation across three periods runs about 162 meals a period — one line covers it; collapse to two periods and a second line earns its space.
What percentage of students eat school lunch?
The published national average is 57% of enrollment for lunch and about 30% for breakfast — with universal-free buildings running meaningfully higher. Plan equipment on your own participation once you have it; the average is the starting point.
How long do students need to eat lunch?
CDC's guidance is at least 20 minutes actually seated — travel and line time not included. When periods shrink, serving speed becomes a nutrition issue, not just a scheduling one, which is why line count is the first fix.
How should milk be held on a serving line?
At 41°F or below, per the federal food code adopted in school programs — including on share tables, where cartons must sit in ice or refrigeration. A day's demand is one half-pint per meal served, which is the number that sizes the milk cooler.
