How much detergent per gallon of water?

Alconox's published rate for a 1% cleaning solution is about 1¼ ounces — two tablespoons — of powdered detergent per gallon, doubling for 2% and tripling for 3%. A 12-gallon sink at 3% takes 6 cups.

When do I need more than 1%?

Baked-on soils, greasy film, and hard water all justify 2 to 3% — and Alconox's guidance adds: double the dose and raise the water temperature before reaching for something harsher.
