How many gallons does a sink compartment hold?

Advance Tabco's published working formula: length × width × depth in inches, divided by 321. A 24×24×14 bowl works out to about 25 gallons.

How big should a three-compartment sink's bowls be?

Big enough to submerge the largest thing you wash — a full sheet pan needs roughly a 27-inch bowl to lie flat. NSF also requires drainboards at least as wide as the smaller bowl dimension.

How much bleach sanitizes a sink compartment?

Per Advance Tabco's table: from 0.70 oz in a 10×14 bowl at 10 inches of water up to 3.60 oz in a 20×28 bowl at 12 inches. Verify with test strips — concentration, not volume, is what the inspection checks.
