The dishroom is a production line
Treat warewash as a system: scrapping, racking, the machine, drying, and the return path for clean ware. The machine is usually not the bottleneck; the tables are. Undersized soiled-side landing space backs up bussers, and undersized clean-side space forces staff to stack wet ware. Lay the room out for one-way flow so dirty and clean never cross. Budget for the booster heater or chemical program, ventilation over the machine, and floor drainage. Confirm drainage and ventilation requirements with your local code official. If the dishroom footprint is genuinely fixed and small, consider how much disposable ware actually costs per year; the comparison is worth running honestly.
Water treatment protects everything downstream
Every machine that heats or freezes water, including steamers, combis, ice machines, coffee brewers, and dish machines, is a scale collector. Water hardness varies widely across the Great Lakes region, sometimes between neighboring towns. Get a water test before you spec equipment, then budget filtration or softening sized to the equipment the manufacturer requires. This is one of the cheapest forms of insurance in the building. Include cartridge replacement as a recurring operating line, because a filter past its life is just a housing.

Waste has a workflow too
Trash, cardboard, compost, and recycling all need a path from the kitchen to the curb that does not cross clean food flow. Walk that path on the drawings. Ask where full bags stage during a rush, whether the dumpster area needs enclosure or refrigeration for odor and pests in warm months, and who breaks down boxes and where. Pulpers, compactors, and disposers can shrink hauling volume and hauling cost, but they need water, power, and drainage planned in. Disposer rules vary by jurisdiction, so confirm with your local code official before you spec one.
Grease management is not optional
Anything that fries or grills sends grease toward the drain, and your jurisdiction will require a grease trap or interceptor to catch it. Undersizing is the classic mistake: an undersized trap needs constant pumping and still risks backups, and a sewage backup closes the kitchen. Size for the equipment you will have, not the minimum, and put pumping on a service contract. Plan used fryer oil storage as well, with a container location and a rendering pickup that staff can reach without carrying hot oil across the kitchen.
