Match an ice machine to your operation in three steps. First, pick the ice form your menu needs, because cube, nugget, and flake ice serve different jobs. Second, size production to your busiest day with headroom, since machines make ice around the clock but you use most of it in a few hours. Third, size the storage bin so the machine can bank ice ahead of the rush. Then choose the condenser type your space can handle and get your water tested. Pick the ice form first

Cube ice melts slowly, displaces well in beverages, and suits bars and general dining. Nugget ice is soft, chewable, and popular in healthcare and quick service, though it melts faster. Flake ice molds around product and works for display, produce, and clinical uses. Some machines also produce specialty shapes for cocktails. Condenser choice shapes the room

Kitchens with harder water or heavy use may need to clean more often than the baseline. Regular cleaning also protects production, since scale buildup slows the machine down long before it kills it.

Why does my ice come out cloudy?

Cloudy ice usually comes from minerals and trapped air in the water as it freezes. Proper filtration removes much of the sediment and mineral content that causes it, which is one more reason to test your water and install the filtration the manufacturer specifies.
