Buy a fryer on three things: recovery, filtration, and oil economics. Recovery, the speed at which the oil returns to temperature after you drop a cold load, determines how much food you can actually produce; it matters more than tank size. Filtration determines how long your oil lasts, and since oil is often the largest lifetime cost of owning a fryer, built-in filtration frequently justifies its price. Everything else, including fuel type, vat count, and controls, follows from your menu and your building. If you remember nothing else, remember that the cheapest fryer to buy is rarely the cheapest fryer to own.
Recovery beats size
Two fryers with identical oil capacity can have very different output. When frozen product hits hot oil, the temperature drops, and food absorbs oil and cooks poorly until it climbs back. A fryer with strong recovery gets back to temperature fast and turns out consistent product load after load. During your evaluation, ask about recovery behavior under a realistic frozen load, not an empty-vat spec. High-efficiency fryers transfer more of their energy into the oil instead of the flue, which shows up as both faster recovery and lower utility bills.
Oil is the real cost
Many operations spend more on oil over a fryer's life than they spent on the fryer. Every practice that extends oil life goes straight to the bottom line: filtering on schedule, skimming debris, holding correct temperatures, and covering vats overnight. This is why filtration deserves the spotlight. Built-in filtration lets staff filter with a valve and a switch, so it actually happens every shift. Portable filter units cost less but depend on someone hauling hot oil, so filtering happens less often. Be honest about your crew. Oil-conserving vat designs that fry the same volume in less oil compound the savings further.

Vat count and menu separation
One large vat is rarely the right answer. Separate vats keep fish away from fries, let you hold different temperatures for different products, and give you a fallback when one vat is down or being filtered. Split vats stretch this further for low-volume specialty items. Sketch your fried menu at peak and assign products to vats before you settle on a battery size.
Gas, electric, and the building
Gas fryers dominate where gas is available and recover aggressively. Electric fryers heat within the oil itself, lose less to the room, and fit buildings without gas, but demand substantial power. Either way the fryer almost certainly lives under a grease-rated hood with fire suppression aimed at it, so coordinate placement with your ventilation plan and confirm requirements with your local code official.
Vat style and cleaning
Open-pot vats are easy to clean and suit low-sediment products. Tube-style vats handle heavy sediment from breaded product. Flat-bottom designs serve specialty items. Match the vat to what you actually fry, then ask to see the boil-out procedure. A fryer your crew dreads cleaning becomes a fryer that runs on degraded oil.

How often should fryer oil be filtered?
For most operations, every shift, and at minimum daily for heavy fry menus. Consistent filtering removes the debris that breaks oil down, which is why built-in filtration matters: it makes the every-shift habit realistic instead of aspirational. The right frequency for your kitchen depends on what and how much you fry, so follow the manufacturer's guidance for your load.
How can I tell when fryer oil is spent?
Watch for oil that has darkened well past fresh, smokes at normal frying settings, foams around product, or gives food an off flavor and greasy texture. Those are signs the oil has broken down and no amount of filtering will bring it back. Tracking when those signs appear also tells you whether your filtering routine is actually working.
