Water hides on the P&L because every gallon gets billed twice — once coming in, once going down the drain as a sewer charge — and because the biggest wasters are the fixtures nobody ever evaluates. The good news is that water is also where the cheapest wins in the whole building live. The single best efficiency purchase in most commercial kitchens costs less than a hundred dollars, installs in minutes, and pays for itself in weeks. Start there, then work down the list.

The $70 fix: the pre-rinse spray valve

The spray valve over the dish table runs hours a day, and an old standard valve pushes three to four gallons a minute through it. Dish machines are the headline: water per rack is a published, tested number, and efficient machines cut it substantially — which compounds, because every saved gallon was heated, softened, chemically dosed, and billed twice. When a machine is up for replacement, the water-per-rack line on the spec sheet deserves as much attention as the price. Steamers are the stealth case: a traditional boiler-based steamer can draw a continuous condensate-tempering stream all day, while connectionless models use a few gallons per day, total. Ice machines vary widely per hundred pounds of ice, and water-cooled condensers — where an older machine literally runs building water to shed heat — cost enough to run that many utilities restrict them; air-cooled is the modern default.
