Gas has run professional kitchens for a century, so why are so many operators adding induction? The short answer is efficiency and comfort. The honest answer is that induction doesn't replace gas everywhere — most kitchens land on a mix, with induction where speed and efficiency matter and gas where the flame does.

How Induction Cooking Works
Induction skips the flame entirely. A coil under the glass creates a magnetic field that turns the pan itself into the heat source. Nothing heats the air in between, which is why the surface stays cool to the touch and the heat lands where you want it — in the food.
That direct transfer is the whole story. On induction, the great majority of the energy reaches the pan; with gas, a large share of it goes into the room and your ventilation load instead.
Where Induction Wins
- Efficiency and a cooler kitchen. Less waste heat means lower energy use and a lighter load on your HVAC.
- Cleaner air. No combustion means no open flame and none of the byproducts that come with it.

Where Gas Still Wins
- Open-flame work. Charring, flambé, and wok cooking still want a live flame.

- No cookware rules. Any pan works, with no magnetic requirement.
One caveat on that last point: induction only works with magnetic, iron-based cookware. The test is simple — hold a magnet to the bottom of the pan. If it sticks, the pan will cook on induction.

Questions operators ask
How do I know if my existing cookware will work on induction?
Hold a magnet to the bottom of each pan — if it sticks firmly, the pan will work. Cast iron, carbon steel, and magnetic stainless all cook on induction; plain aluminum and copper won't unless they have a bonded magnetic base. Budget for some cookware replacement in an induction transition, and treat it as part of the project cost rather than a surprise.
What does induction mean for my kitchen's electrical service?
Commercial induction units draw significant power, and a bank of them may exceed what an older kitchen's panel can supply. Before committing to a lineup, have an electrician confirm available capacity and circuit requirements for the specific units you're specifying. On new builds and major renovations this is easy to plan in; on retrofits it's the first question to answer.
Is there a learning curve for cooks moving from gas to induction?
There's an adjustment, mostly around how immediate induction is — heat changes register in the pan almost instantly, faster than a gas flame's visual cues suggest. Cooks also lose the habit of judging output by flame height and gain precise, repeatable settings instead. Most line cooks adapt within days, and trialing the equipment on your own menu at a culinary center shortens the curve further.
