What do you need to know before the drawings are done? Four things. Which cooking equipment goes under a hood, because hood size and type follow directly from the cookline. The cookline writes the ventilation spec
Ventilation is designed around the equipment under it. Grease-producing appliances like fryers, griddles, and charbroilers demand grease-rated hoods and higher exhaust. Ovens and steamers that produce heat and vapor but little grease may qualify for a lighter hood class. This is why the equipment list must be final before the mechanical drawings are. A cookline change late in design forces the engineer to start over. Lock the lineup early, and flag any appliance you may swap in later so the hood is sized for the heaviest-duty future case.
Makeup air is half the system
Air that leaves through the hood must come back in. Without designed makeup air, the kitchen goes negative: doors are hard to open, pilot lights wander, the dining room pulls smoke, and comfort suffers everywhere. Makeup air needs a path, a fan, and in cold climates a plan for tempering, because dumping winter air on the cookline makes an unworkable station. Ask your engineer directly how makeup air is delivered, where, and at what temperature. Heating that air is a real operating cost, which is why capture efficiency matters: a hood that captures well at lower exhaust moves less air you paid to heat.
Duct routing drives the budget
The hood is the visible piece; the duct is the expensive one. Grease duct must run from hood to exterior along a route that satisfies clearance and enclosure requirements, and in multi-story or historic buildings that route can be long and disruptive. Get the routing conversation started at site selection, not at permitting. In sites where a traditional duct run is impractical, ventless and recirculating options exist for certain appliances, with real limits on what they can sit over. Confirm what your jurisdiction accepts with your local code official before you count on one.

Fire suppression follows the layout
Hood fire suppression is aimed at specific appliances in specific positions. Move a fryer two feet and the system may need rework. Decide appliance order on the line before suppression is installed, and tell your contractor whenever the lineup changes, even years later.
Plan for cleaning and service
Grease filters need regular washing and duct systems need periodic professional cleaning. Ask how filters come out, whether staff can reach them safely, and how access panels are placed. A hood that is hard to clean will not be cleaned well.

The mechanical engineer designs the exhaust and makeup air system, working from the equipment schedule your consultant or design dealer produces. That is why the cookline has to be final first: the engineer designs around the appliances, not the other way around. Your rep supplies hood and equipment specs to feed that process.
Can I add a new piece of cooking equipment under my existing hood later?
Sometimes, but never assume it. The hood was sized and rated for the appliances beneath it when it was designed, and fire suppression is aimed at specific positions. Before adding or swapping anything, check with your suppression contractor and local code official, and flag likely future swaps during design so the hood is sized for the heaviest case.
