What's actually living in your ice machine? In a neglected one: pink slime and black mold, growing in exactly the conditions the machine creates on its own — warmth, moisture, darkness, and a door nobody opens. Ice goes into nearly every beverage you serve, and the machine making it is often the least-examined piece of equipment in the building.

Is the pink slime in ice machines dangerous?

The pink film is a biofilm of airborne bacteria and yeast that thrives in wet equipment, and because the FDA treats ice as food, its presence means a food-contact surface is out of compliance. Beyond the regulatory issue, biofilm can harbor other organisms and taint the taste of the ice. If you can see it, the machine is overdue for a full clean and sanitize, not just a wipe-down.

Which cleaning tasks can staff do, and which need a technician?

Daily wipe-downs, weekly bin and scoop sanitizing, and manufacturer-directed cleaning cycles are well within staff routine. Deep cleaning and descaling can be staff work if someone is trained on your specific machine, but the annual service — refrigeration checks, water system inspection, filter replacement — belongs to a qualified tech. The schedule fails most often in the middle, so assign the quarterly deep clean to a name, not a shift.

Does water filtration really affect how often I have to clean?

Yes. Scale from hard water coats evaporator plates and water lines, and that mineral layer gives biofilm more surface to grip while making the machine work harder.
