Raising the bar, literally: what a 36" work surface does for your bartenders

Watch a bartender work a busy Friday and you'll see the same move a few hundred times: bend to the ice bin, straighten up, pour, bend again. Traditional underbar equipment puts the work surface at 30 inches, a height set decades ago when the ice bin was the center of the station. Every drink built at that height is built hunched over.

Glastender's Elevation series rethinks that standard. The work surface rises to 36 inches, counter height rather than desk height, and the station is organized around a dedicated work center instead of the ice bin. That is a deliberate choice about where a bartender's time actually goes. Most of a cocktail is measuring, pouring, stirring, and garnishing, and Elevation puts all of it at a height where the bartender stands straight to do it.

Because the layout is organized around the work center, operators get more function in the same footprint rather than a bigger station.

Is a 36-inch work surface right for every bar?

No. Elevation is purpose-built for cocktail-forward programs where bartenders spend most of their time measuring, pouring, stirring, and garnishing. A high-volume beer-and-shots bar that lives out of the ice bin may be better served by a traditional 30-inch lineup.
